A kale soup recipe, akaGrünkohlsuppe, that's quick? Yes, I've got two here. One has the traditional German flavors of kale and sausage ... real down-home goodness. With extra veggies to make it extra good.

The delicious earthiness of the kale really shines through. It's perfect for my "meat-and-potatoes" hubby. Filled with lots of goodness, it really satisfies.

German Kale Soup Recipes: Oma's Grünkohlsuppen (5)Vegan Kale & Sweet Potato Soup

This second one is vegan... also super simple to make. Not traditionally German, but surprise, it's something even my hubby enjoys! It has lovely sweet potatoes, carrots and celery which round out the flavor.

A pinch of cayenne to spice it up if you wish. You choose just how 'hot' you want it.

Both of these soups use canned or jarred kale. That's what makes them so super simple and quick. Check what "Oma says" below if you're using fresh kale. It's not that much more work and it's just that bit more healthy.

Either way, you'll have a super simple kale soup recipe you'll be making often.

A bit of this and a bit of that ...

  • Add a pinch of cayenne if you'd like this a bit spicy.
  • Use a potato masher to mash the soup slightly if you like the texture of the soup to be thicker rather than brothy.
  • Have other veggies in the crisper? Use what you have, omit what you don't. Cauliflower, broccoli, and parsnips would be great.
  • Try adding a bit of lemon juice to the finished soup.

Oma says:

Don't have canned kale available?

Use a large bunch of fresh kale instead. Wash it well. Roughly chop the kale and add it to the soup once the potatoes have cooked for about 10 minutes.

Continue to simmer soup until kale is tender and no longer bitter
