Usually there is nothing you can do or need to do because it doesn’t cause serious problems. The jam or jelly is still safe to eat. You might notice that your jam or jelly is weepy (liquid seeps out of the jell and forms a puddle) or that the jell is stiffer than normal. It’s also possible you could experience a more acid taste.

I used Pomona’s for the first time last year. I was so disappointed. I used straight blackberry juice for jelly and 2 things happened, It was like cement, so too much calcium? I only used 1 cup of sugar and two, there was no taste. We like tart flavorful jelly. What did I do wrong? I’ve always used Sure-Jell but sometimes I get syrup. Can you help me?

I was rushing to get my apple scrap jelly done today and I didn’t pay enough attention to the instructions for the pectin – and I mistakenly added way too much calcium powder (not sure exactly how much; I dumped the entire packet into ~1/4 cup of water and then I poured about 3/4 of that mixture into my pot of 5 cups apple juice.) Now I’m wondering if the jelly is even edible? I just took it off the heat, not planning to water bath it as my family gobbles it right up, and as it’s still hot I can’t yet tell if it is going to jell properly. I don’t really mind a weepy jelly but I’m concerned about the safety of that much calcium powder. Can someone help me on this?

Yes, it should be just fine to consume your jelly with that much calcium in the mix.

It was my first time with this method. I made up 1/2 t calcium to 1/2 cup water thinking it was what I needed for the recipe. When I think I needed just 2Tbsp of the 1/2c of mixed water. My Jelly is watery it tastes like it would have been good but didn’t jell at all.

Hi I made a big mistake today. I used 8 cups of mashed strawberries, 4 tsp. pectin, 2 cups of sugar and 2 while packet of calcium in 1 and 1/2 cups of water. You think this is still good to eat and can? Please advice. Thanks.

That is a lot of calcium water! We believe that it should not make your jam harmful. How did your jam turn out?
