If the idea of tackling a home canning project seems too daunting, there are ways to preserve spring and summer produce just by using your refrigerator or freezer. Fresh strawberries lend themselves well to making a beautiful purée that can be stored for a short time in the refrigerator or a longer period of time in the freezer. It’s a treat to pull out containers of peak-strawberry flavor later in the year!

What Is Strawberry Purée Made Of?

Strawberry purée is made with either fresh or frozen strawberries, some granulated sugar, and a bit of lemon juice.

Is Strawberry Purée the Same as Jam?

Strawberry purée is different from strawberry jam. The purée is uncooked and only lightly sweetened, while jam is cooked and tends to have a higher sugar content.

How Long Does Strawberry Purée Last in the Fridge?

Strawberry purée will last up to five days when stored in an airtight container in the refrigerator. It can also be frozen and stored for up to three months.

  • 1 1/2 pounds

    fresh strawberries

  • 1/2

    medium lemon

  • 1/4 cup

    granulated sugar

Instructions

  1. Trim and quarter 1 1/2 pounds strawberries (about 4 cups). Place in the bowl of a food processor fitted with the blade attachment or a blender. Juice 1/2 medium lemon until you have 1 tablespoon. Add the lemon juice and 1/4 cup granulated sugar to the food processor or blender. Blend on high speed for 1 minute. Scrape down the sides of the bowl and blend until smooth, 30 seconds to 1 minute more.

Recipe Notes

Storage: Refrigerate strawberry purée in an airtight container for up to 5 days. The purée can also be frozen in a freezer-safe container for up to 3 months.
