Salami is the name given to a family of ‘cut and keep’ sausages made from a mixture of raw meat such as pork, beef or veal flavoured with spices and herbs. Salami originated in Italy but different varieties are now made around the world. Salami can be salted, smoked or air-dried.

Salami can be bought ready-sliced and pre-packed or is available freshly sliced at deli counters and good delis.

Preparation

Salami makes a great sandwich filler, pizza topping or addition to salads, particularly potato salads. Some salamis are good for cooking with – add them to risottos, pasta sauces and other meat and vegetable dishes.
