I don’t believe there is a Weight Watchers’ lazy crowd because it is a ton of work to change your diet and lifestyle – hang in there, buddies!

A slice of this cake is only 4 SmartPoints and takes just 3 ingredients (4 if you count water).

The best part is that you will be using pumpkin spice which is very hip right about now. Every year, I go down the pumpkin spice path with a number of recipes. Last year, I shared pumpkin spiced muffins and a pumpkin spiced smoothie.

It is fun to buy cans of pumpkin and dream about what you can do with them because pumpkin is inexpensive, low in calories, and is considered a fruit. Fruit is easy to work with as compared with let’s say – beets – which no one wants to eat.

You can find the pumpkin in the baking section of your supermarket with the canned cherry and apple pie filling. I kept looking for it next to the other canned vegetables and fruit but, alas, it is considered a baking item.

After doing this job since 2009, I could write a book about how to find ingredients in a grocery store. It seems like every time I go, I have to find something new and it drives me bonkers.

It would be cool to have an app that would scan my terrible handwritten grocery list and then shows me which aisles and shelves my food is in.

Never going to happen.

The pumpkin spice works in angel food cake because on its own angel food cake doesn’t have a lot of flavor. My kids LOVED this and I loved that it was only 92 calories for a slice.

I thought this was great served with a little whipped cream and a coffee.

I am excited to try this recipe. Thanks

How did you figure this out? This will be a terrific replacement for some of the heavier desserts that appear at Thanksgiving. Think of the vitamin A!!!!

Jennie

@Jennie - any time you mix something with Angel Food Cake - you are going to get a lighter dessert because angel food cake is only egg whites and sugar. No butter, less flour, no yolks. Thanks for your question!

Snack Girl

Make sure you don't buy pumpkin pie FILLING. It drastically changes the stats and points (not in a good way). I have been making a similar recipe for years using Angel Food Cake mix and crushed pineapple. Delicious and I'm sure this one will be also.

Kris

This sounds so simple and delicious! I cannot wait to give it a try. :)

Susan

Going to a tea Sunday so this is what I will make and maybe surprise people!

just a note to your comment about finding stuff in a grocery aisle? if you download the Walmart ap - type in what you want, and if you have a 'favorite' store listed, it will tell you what aisle it's in. Even if you don't shop at Walmart, you can use it to help identify what aisle it might be in at a different store? I'm pretty sure they all operate with the same basic business model, eh? Thanks for the great recipes! Def trying this one!

Jerri

I'm excited to make this too. This weekend I'll make it.

Just so you know I am addicted to your no bake balls. I love the chocolate ones. Instead of 2 T water I use almond milk. Makes the texture smooth and creamy. I've also used wonder cocoa which is fat free and caffeine free, but you do have to use more al one milk dye to its drier texture.

Maggie

If you have Publix in your area you can create your shopping list on their website, pick your favorite store and it shows you what aisle the item is on.

Lisa

so excited to make this as my granddaughter loves anything pumpkin..The plus side is that it is so darn easy to make.

Thanks for posting lisa....

This sounds delightful. I have one complication - i cannot have any gluten. Is there an easy work-around? Have you seen any gluten free angel food boxes by chance?

thanks for all your creative ideas!!

Heather

This looks delish Lisa, but I am puzzled by the instruction to grease the baking dish. Every Angel Food cake recipe I have ever seen warns against doing this as the cake will not rise up the sides of the pan. Perhaps this only applies to baking in a tube pan? Any thoughts?

Phyllis Wagner

Yum! I'm all about the pumpkin spice. I've also made the cake using pineapple like Kris mentioned. I also made it using homemade applesauce. So easy and great flavor! Phyllis, I think the no grease is to let it rise up the walls of the tube pan but since this is made kind of like a sheet cake you don't have to worry about that? Thanks for the great idea Lisa!

Patricia

I am curious, can you use a traditional angel food cake pan or do the added ingredients make it so that it will not rise correctly? I use to make angel food cakes and will definitely be trying this! Thanks!

laxmom16

A bunch of really good questions here! I did it in a casserole pan and didn't grease it - and it stuck like crazy. I think you need to grease it because you are significantly changing it with the pumpkin.

I am not sure if it would work in an angel food cake pan - it is quite a bit more volume than a regular angel food cake. Has anyone tried it?

Thanks for all the great questions!

Can not find 18 ounce angel food cake mix. Had to buy cake 2 mixes

to make per recipe. I froze the cake mix, that I had to take 2 ounces out of mix. My family loved the cake.

Barb Farr

I have used pumpkin in Chocolate cake before too. You can't taste the pumpkin but it makes a very moist cake and I learned this from Weight Watchers.

Patricia A. Diaz

Looks like an easy breezy cake to make. Can't wait to start.

I wonder if I could do this with a made from scratch angel food cake.

Eileen

Where would you find an 18oz box of angel food cake mix?

FAQs

What is the secret to a good angel food cake? ›

Egg Whites: The star of the show! They provide all of the leavening for angel food cake. Using only whites (no yolks) gives this cake a super light texture. Be sure to use only fresh eggs; liquid egg whites in a carton have been pasteurized, which can prevent them from whipping into stiff peaks.

Can I use powdered sugar instead of granulated sugar in angel food cake? ›

Two types of sugar are used for this recipe, as they serve different purposes. The granulated sugar, which you'll add while whipping the egg whites, helps stabilize the foam and give the cake its structure. Powdered sugar is added in later for additional airy sweetness, tenderization, and flavor.

How do you keep angel food cake fluffy? ›

The egg whites are actually the sole leavening ingredient providing all the cake's rise. Use freshly separated eggs because they aerate the best. Carton egg whites or egg whites that have been frozen won't expand as much during the whipping process, which will negatively affect the rise of your cake.

Why don't you grease the pan for angel food cake? ›

Remember - your batter will not be as stiff as a meringue. Do not grease the angel food cake tube pan (one in which the center tube is higher than the walls of pan and the bottom is removable.) You want the batter to cling to the side while it is rising. A greased pan will not allow the batter to rise.

What does cream of tartar do in angel food cake? ›

Cream of tartar is an acid and helps to stabilize the whipped egg whites. There is really no substitution for cream of tartar. If you don't use cream of tartar in this recipe, the cake will collapse.

How to improve angel food cake mix? ›

Give your boxed angel food cake mix a summery twist by adding a can of crushed pineapple to it. Gently fold it into the whisked batter, careful not to deflate the mixture. If you over-whisk it, the cake will turn out chewy and dense.

What happens if you overmix an angel food cake? ›

In delicate sponge-type cakes (like chiffon or angel food cake) there are two moments for concern. First, when you're whipping the egg foam, and second, when you're incorporating the flour. An overmixed egg foam will be slack, wet, loose, and unable to hold peaks.

Is it better to use cake flour or all-purpose flour in angel food cake? ›

1 rule is to follow the recipe. Use cake flour in recipes where you want an extra-light, extra-fluffy texture, like Angel Food Cake, Cream Cheese Pound Cake, or Buttermilk-Chocolate Cake. You can also use cake flour to bring a more tender crumb to other sweets, like Chocolate Crinkle Cookies.

Should egg whites be cold when making angel food cake? ›

The perfect egg temperature for angel food cake is about 60 degrees. Eggs that are too cold won't whip as well, so take a dozen eggs out of the refrigerator about an hour before you bake.

Can diabetics have angel food cake? ›

Because of this, when consumed in moderate amounts, Angel Food Cake does not affect blood sugar levels. People with diabetes can safely eat Angel Food in moderate amounts because it doesn't have simple carbohydrates and sugars, meaning that it won't cause a sudden or significant spike in blood sugar levels.

How to tell when angel food cake is done? ›

An angel food cake is finished baking when the cake is golden brown and it springs back when touched. If the cake stays pressed when you touch it, it isn't finished baking and needs a few more minutes.

Can I use a Bundt pan for angel food cake? ›

Second, most tube pans have a removeable bottom, where bundt pans definitely do not. The one thing bundt pans and tube pans have in common is their hollow center tube. It's generally advised to bake an angel food cake in a tube pan, but I have always used a bundt pan, and it works very well.

What gives angel food cake its taste? ›

Vanilla and almond extracts: A combination of vanilla extract and almond extract gives angel food cake its signature flavor that's delicate and almost marshmallow-like.

Why do you rest angel food cake upside down? ›

Every angel food cake has to be cooled upside down in the pan. Why? Until the cake is completely cooled, its spongy structure hasn't set. Flipping it upside down makes sure it doesn't collapse during that process.

Why did my angel food cake come out dense? ›

Greasing the pan can result in a flat, dense cake. Always flip the cake pan to cool your angel food cake with the open side down. Angel food cake will continue to set as it cools, and it can sink down in the pan and collapse if you don't flip it to cool.
