Banana bread is such a timeless classic recipe that can be enjoyed over and over again. I have fond memories baking all sorts of banana breads with my Nana in the kitchen when I was growing up. It made an appearance at most holiday parties as well. Banana bread has stood the test of time.

This recipe couldn’t be any easier to prepare. Minimal ingredients and preparations make this a must-have recipe to keep. Simply combine all the ingredients for the bread together and mix, then pour into a prepared loaf pan. Sprinkle with a peanut butter streusel topping and pop it in the oven and enjoy how nice your house smells for the next couple of hours. I love the the aroma of banana bread baking. The spices complement the banana so well. When baking banana bread, you want to be sure not to over mix the batter. No body likes a tough bread

Ingredients

  • [b]Banana Bread
  • [/b]3-4 overripe bananas , mashed
  • 1/2 cup plain yogurt
  • 2 eggs
  • 2/3 cup organic maple syrup
  • 2 cup flour
  • 1/2 cup oats
  • 1 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 2 teaspoon vanilla extract
  • [b]Streusel Topping
  • [/b]1/4 cup creamy peanut butter
  • 2 tablespoons dark brown sugar
  • 1/4 cup flour
  • 1/4 cup oats

Instructions

  • Preheat oven to 375ºF and grease or line a loaf pan; set aside.

  • In a large bowl, beat eggs, yogurt, bananas, maple syrup, and vanilla. Mix in flour, oats, nutmeg, and baking powder. Stir until combined. Pour batter into prepared loaf pan and set aside.

  • In a separate bowl, combine oats, flour, brown sugar, and peanut butter and mix until it resembles a coarse crumb. Sprinkle on top of batter.

  • Bake for 40-50 minutes or until golden brown.
