Making Sticky Toffee Pudding In Advance | Ask Nigella.com (2024)

Full question

I’m looking at pre-cooking the Sticky Toffee Pudding. If I bake and then chill the pudding would this be ok? Or is it best to serve as soon as the sponge has been cooked?

Our answer

Nigella's Sticky Toffee Pudding (from AT MY TABLE) is at its best on the day it is made as the sponge is soft and light. When the pudding is chilled it becomes more dense and although it is possible to reheat squares of the pudding in a microwave, the texture is never quite the same.

However, it is possible to bake the sponge up to one hour in advance, spoon some sauce over the top and then leave it to stand in a warm place for up to one hour before serving. You may need to warm the extra sauce gently again before serving with the sponge. Store leftovers in the fridge for up to 5 days and store the sauce and sponge in separate containers.
