Happy Monday! I hope you all had a fabulous weekend.

Kev was out of town all last week. 🙁 He got back late Friday night and I was so happy to have him home again. He shouldn’t have to travel again for a long time and I’m very grateful.

My sanity depends on him being home
.or at least in the general vicinity!

It’s a beautiful day today in Utah full of warmth and sunshine, but it was cold over the weekend. In fact, look what it did on Friday


Ya, snow in September! Crazy. It obviously didn’t stick around, but it made me realize I’m not ready for the cold weather just yet.

Oh, and you can see our sad little weed garden in that pic too. We decided not to do a garden this year (for a lot of reasons) and I have missed it SO much! I think our garden looks sad and lonely, don’t ya think?

Anyway, on Saturday night I was able to go to a wonderful Women’s Conference for our church with my mom, sister and our good family friend, Jen.

We heard a lot of inspiring and encouraging messages from our church leaders and I loved it so much! Afterward we went to dinner at Cafe Zupas (my fav!) and it was so yummy.

I ended up ordering the Mangoberry salad (1/2 order) and a Pulled Pork Sandwich and everything was SO DANG GOOD. Seriously, when I was done eating I wished I could start all over and eat everything again.

Loved every bite.

Sadly, Cafe Zupas doesn’t list the nutritional information of their food (seriously so lame), so I’m not sure how many calories were in my food. The salad definitely tasted light, but I’m not so sure about the sandwich. It was dang good, regardless.

We had a wonderful Sunday as well! We don’t have church until 1:00, so I decided to make a yummy breakfast. BTW, I don’t make exciting breakfasts most days, so we usually make something yummy on Sunday.

I decided to make my mother-in-law’s pancake recipe and I’m serious when I say they are the BEST pancakes in the whole entire world. Seriously.

I didn’t even like pancakes until I had hers. Now I’m addicted. I topped mine with some blueberries and sugar-free syrup. I also had 1 egg + 2 egg whites scrambled on the side. Yum.

These pancakes are so light, fluffy and flavorful AND they turn out every time! They aren’t healthy (they include white flour), but they aren’t too bad either. They are definitely yummy.

Pretty pathetic. We called Kev’s mom years ago to get this recipe from her. We quickly jotted it down on a sticky note and that’s just what we’ve used since then. Sad.

Anyway, I thought I would share the recipe so you guys can make an indulgent breakfast sometime too. Here ya go


Ingredients:

  • 2 cups flour
  • 5 teaspoons baking powder
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 3/4 cup milk
  • 2 eggs
  • 1/3 cup vegetable oil

Directions:

In a large bowl, combine dry ingredients (flour, baking powder, sugar and salt.) Mix well and set aside.

In a mixing bowl, beat milk, eggs and oil until combined. Add dry ingredients and mix just until moistened. Do not overmix (a few small lumps are fine.)

Preheat griddle (I put mine on medium-low heat) and pour batter onto hot griddle (I use a 1/4 cup measuring cup.) Cook until batter starts to bubble and becomes a little dry around the edges.

Flip and cook on the other side until golden brown.

That’s it! We’ve even added chocolate chips or blueberries to the batter and they have been so good!

I think this recipe makes about 15 pancakes.

I bought this yummy Turkey Breast Roast at Costco the other day


It was a little bit expensive, but I thought it looked easy, healthy and yummy so I decided to get it anyway. I threw it in the oven before we left to church so it would be ready when we got home.

I also put some Roasted Red Potatoes in the oven too. They are so yummy. When we got home from church, I decided to make some of the BEST breadsticks ever to go with everything.

I wanted to make a salad too, but decided to keep it simple and just heated up some canned green beans instead.

Everything turned out so yummy and ALL of my kids loved everything. That is a very rare thing indeed. 😉

This picture doesn’t do this meal justice. It was a lot yummier than it looks.

I wished we would’ve made some gravy with the meat drippings, but we didn’t. Some of my kids put some BBQ sauce on the turkey though.

It was a great meal.

Later on last night I decided to make Chocolate Chip Cookies for my family. They are everyone’s #1 favorite treat (myself included) and there is just something about Sunday nights that calls for treats.

Soooo, even though I’m personally not eating treats right now, I still made them for everyone else.

Kev said something like, “Wow, now that’s true service
.making your favorite treat when you can’t even eat it.” I told him that as funny as it sounds, it’s still very fun and rewarding to make my favorite treats and watch my family enjoy them.

Sounds cheesy, but it’s true.

Kev and I also talked about how many cookies we think we could eat if we were in a contest or something (or if I just let myself eat as many as my little heart desired!) We both agreed we could each eat an entire batch (~ 48 cookies) all by ourselves.

I would probably want more after that too. I’m kinda sorta serious. I really, really love Chocolate Chip Cookies SO MUCH!
