If there’s one dish that always gets the thumbs up from every single member of my family it’s this slow cooker ham in co*ke. I don’t always wait for a special occasion like Christmas, or a family Sunday lunch – sometimes, I like to make this so we can have it with egg and chips, and use leftover slow cooker ham for sandwiches. And the best thing? This takes no time to make and you don’t have to do any prep – well, not a lot.

What ingredients are needed
Not many ingredients are needed for this slow cooker ham recipe – however, aside from choosing a good gammon joint, you do need full-fat cola – none of that diet, no sugar stuff as it won’t impart its sweetness on the ham. co*ke creates a sweet and savoury flavour all the while keeping the gammon joint moist and tender.
Gammon joint
2 litres of cola
1 celery stick
1 carrot
1 cinnamon stick
black peppercorns
2 bay leaves
Honey
Wholegrain mustard
Red wine vinegar
Chinese five spice
How to slow cook this ham joint?
That’s the beauty of using a slow cooker. Slow cooker ham in co*ke is simply a case of throwing in the vegetables, the cinnamon stick, peppercorns and the cola – then covering and cooking on medium-high for 5 hours. If you’d prefer to cook on low, I would suggest it needs about 7-8 hours – you may want to check on it from time to time, as you need the gammon joint to retain its shape for roasting and slicing later. Too long in the slow cooker, the meat will be too tender and fall apart.
After carefully removing the gammon from the slow cooker [you may need to drain all the cola first], it’s time to slather the honey mustard glaze onto the meat. But first, you need to remove the tough skin on top of the fat. Using a sharp knife, you’ll find that it’ll easily peel away. After brushing the glaze, roast the ham in a preheated oven at 200c for 15 minutes. Then add the rest of the glaze and continue roasting for another 30 minutes.
Can this gammon be cooked without a slow cooker?
Yes absolutely. It is exactly the same method, but instead of using the slow cooker, you use a large pan with a lid. Because you’re heating on the hob, you’ll need to bring the cola to a gentle boil, then turn to a low heat and simmer for around 2-3 hours with the lid on, adding more water as the liquid begins to evaporate. Then follow the recipe in the same way, by finishing off the ham joint in the oven.
What to serve with this ham
This honey mustard glazed gammon is perfect for Christmas – alongside all the trimmings. And if I have any leftovers they either go in sandwiches or into my leftover Christmas soup. It’s also fabulous as a Sunday roast alongside these cheesy potatoes. It’s perfect for entertaining, too, if you have family or friends coming over. Because it’s so easy, and not a lot to do – you can concentrate on having fun instead. Sometimes, though, I just love eating this slow cooker ham with fried eggs and chips. It’s a favourite in this household.

Ingredients
- 1.8 kg unsmoked boneless gammon joint
- 1 carrot chopped
- 1 stick celery choppped
- 1 onion peeled and quartered
- 1 stick celery chopped
- 1 cinnamon stick
- 2 tsp peppercorns
- 1 bay leaf
- 2 litres cola
- 100 ml honey
- 3 tbsp wholegrain or Dijon mustard
- 2 tbsp red wine vinegar
- 1 tsp Chinese five spice
Instructions
Add the carrot, celery, onion, cinnamon stick, bay leaves and peppercorns to the slow cooker.
Then place the ham joint on top.
Pour in the cola, and make sure the ham joint is submerged in the liquid.
Cover and cook for 5-6 hours on medium/high. I find that 5 hours is enough in my slow cooker. You want the gammon joint to be cooked through and tender but still retain its shape.
Once done, carefully remove the ham joint and place it in a baking tray or baking dish. You may need to pour the liquid away first, or use large tongs. Be careful as it’s hot.
You want to slice away any of the top layer of tough skin so it leaves the fat. You can score it with a knife, or if you’d prefer not to, that’s also fine.
Preheat the oven to 200c.
Get a bowl, and mix the honey, mustard, Chinese five spice, and red wine vinegar.
Using a brush, cover the ham joint with half the glaze. You can be quite liberal.
Then roast the ham in the oven for 15 minutes.
Then brush or pour over the rest of the glaze, and roast for a further 25-30 minutes.
Leave to rest for 10 minutes, before slicing and serving.
