On normal difficulty it's harder than the average game but not quite at "the dark souls of" level.

There are enough experience points to get to level 20 by just doing quests without murdering everything for experience points. if you do all of the side quests, you can end the game at level 22 and if you maximize exp gains, you can end the game at level 23.

This is a single player game with an optional coop feature - each has its benefits but to experience the game and story at their best, you should play singleplayer. Absolutely, you dont need multiplayer to enjoy the game itself. The multiplayer just makes it a bit more enjoyable. I prefer it in single player.
